Set beneath the Dublin Writers Museum on Parnell Square, Chapter One holds two Michelin stars in the 2026 Guide, one of only a handful of restaurants in Ireland to do so. Prime ingredients like Donegal lobster and Limousin sweetbreads form the backbone of the menu, prepared with classic French technique and subtle modern touches.

Finnish-born chef Mickael Viljanen took over as chef-patron in 2021, and the current lunch service runs Thursday to Saturday from 12:00–14:00, with dinner Tuesday to Saturday from 18:30–21:00. Tasting menus are priced from €135 at lunch and €185–€215 at dinner.

Weekend tables are the hardest to secure — book well ahead if a Friday or Saturday visit is the plan.
